Winter Wonderland at Pelican Hill

This wedding was truly like walking through a winter wonderland! I absolutly adore this couple and just had to share some of the detailed shots of their wedding. Due to privacy I am only including decor shots, but you can see how Pelican was transformed with the holiday spirit. They wanted to get married at sunset, or just a bit afternoon, so that the trees would be lit.  The couple loved La Capella Ballroom, instead of the usual Mar Vista ballroom.  Their wedding cake was Yule Log with over 30 personal items embedded into it. For example, one item was an “eye ball” as the groom was a eye surgeon!  They even had Santa girl come at the end of dinner with cigars for the boys. What a fun group of people and a fun time they had! Thanks to Christopher with Fiori Fresco and his team for creating all the holiday decor…you guys did such a fantastic job! Also, thanks Nichelle with Details a la Carte for creating the paper goods and Ira Lippke for taking all the photographs!

Punta Mita anyone?

I love Punta Mita, especially the St. Regis. I can’t wait to go back, it’s beautiful, serene and gorgeously designed. The food in the all organic restautant is amazing. I had a wonderful vegetable soup last time I was there…the veggies were so perfectly diced up into little bits. I ended up having 2 servings since it was so good! Nutritious Choices Made Simple

Our past Details Details Bride, Janice, and owner of So.Cal Nutrition & Wellness has a great, informative blog. Janice is updating her blog everyday in March in honor of National Nutrition Month & March Madness! I found these helpful ideas for meals and thought I could share some of them with you all:

To get the most nutrition out of your calories, choose foods packed with vitamins, minerals, fiber and other nutrients-and lower in calories. Pick fruits, vegetables, whole grains and fat-free or low-fat dairy more often. Be aware of portion sizes. Even low-calerie foods can add up when portions are larger than you need.

1. Variety abounds when using vegetables as pizza topping. Try broccoli, spinach, green peppers, tomatos, mushrooms and zucchini.
2. Get saucy with fruit: Puree berries, apples, peaches or pears for a thick, sweet sauce on grilled or broiled seafood or poultry, or on pancakes, french toast or waffles.
3. Mix up a breakfast smoothie made with low-fat milk, frozen strawberries and a banana.
4. Heat leaftover whole-grain rice with chopped apple, nuts and cinnamon.
5. Make a veggie wrap with roasted vegetables and low-fat cheese rolled in a whole-wheat tortilla.
6. Try crunchy vegetables instead of chips with your favorite dip or low-fat salad dressing.
7. Grill colorful vegetable kabobs packed with tomatoes, green and red peppers, mushrooms and onions.
8. Banana split: Top a sliced banana with a scoop of low-fat frozen yogurt. Sprinkle with a tablespoon of chopped nuts.
9. Add color to salads with baby carrots, grape tomatoes, spinach leaves or mandarin oranges.
10. Prepare instant oatmeal with low-fat or fat-free mik in place of water. Top with dried cranberries and almonds.
